Italian Sausage Pasta with Homemade Noodles

Ingredients

For the Sauce:

  • 1 tablespoon olive oil

  • 1 pound Italian sausage (mild or spicy, depending on preference)

  • 1 cup diced celery (about 2 ribs)

  • 1 cup sliced mushrooms

  • 1 cup diced fresh tomatoes

  • 2 tablespoons tomato paste

  • 3 cloves garlic, minced

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon salt (adjust to taste)

  • 1/2 teaspoon black pepper

  • 1/2 cup chicken broth

  • Splash of Red Wine

  • 1/4 cup reserved pasta water

  • 1/2 cup ricotta cheese

  • Fresh basil, chopped (for garnish)

  • Grated Parmesan cheese (for topping)

Instructions

TIP: Always season is layers, if you do not cook often season and taste in layers.

Step 1: Make the Homemade Noodles

  1. On a clean surface or in a large mixing bowl, make a mound with the flour. Create a well in the center and crack the eggs into it. Add the salt.

  2. Using a fork, gently whisk the eggs, gradually incorporating the flour from the edges until a dough forms.

  3. Knead the dough for 8–10 minutes until it becomes smooth and elastic. If it’s sticky, add a little flour; if dry, add a teaspoon of water.

  4. Wrap the dough in plastic wrap and let it rest for 30 minutes.

  5. Roll the dough out thinly using a pasta roller or rolling pin. Cut into your desired pasta shape (fettuccine, tagliatelle, etc.) and set aside.

Step 2: Cook the Sauce

  1. Heat the olive oil & butter in a large skillet over medium heat. Add the garlic and simmer

  2. Add the celery and mushrooms to the pan. Sauté for 5–6 minutes until softened.

  3. Stir in the tomatoes, wine and tomato paste, Italian seasoning, salt, and pepper. Stir to combine.

  4. Add the italian sausage and break apart. Stir to combine.

  5. Pour in the chicken broth and simmer for 10–12 minutes, allowing the flavors to meld together. Add reserved pasta water to loosen the sauce if it thickens too much. Add some of your Parmesan and ricotta cheese (measure this part with your heart, more cheese the better)

Step 3: Cook the Pasta

  1. Bring a large pot of salted water to a boil. Cook the fresh pasta for 2–3 minutes or until al dente. Fresh pasta cooks faster than dried!

  2. Reserve 1/4 cup of pasta water, then drain the noodles and add them directly to the sauce.

Step 4: Bring It All Together

  1. Toss the cooked pasta in the sauce until well coated. Let it simmer for 1–2 minutes to absorb the flavors.

  2. Plate the pasta and top with grated Parmesan, and fresh basil.
